Easiest Pot Roast - Really!

I found this recipe years ago and have made it more times than I could count. It is so easy and works great in a pressure cooker or all day in a slow cooker.
I now make my own dressing mixes and have found that 2 tablespoons of my home made mix is about the same as a 1 ounce package of the dry mixes.
Ingredients
- (3 lbs) Chuck Roast
- (2 quartered or chopped) Onion - white or yellow
- (2 Tablespoons) Oil
- (1) Package Dry Italian Salad Dressing Mix
- (1) Package Ranch Dressing Mix
- (1) Package Dry Onion Soup Mix
- (1 Can or approx 14 Ounces) Beef Broth
Directions
- Let your roast warm for about 30 minutes prior to browning.
- Heat oil and brown the roast on all sides. (We use avocado oil or bacon grease.)
- Add onion to the roast - or move both to your cooker.
- Mix all dry ingredients with the beef broth.
- Pour broth mix over the roast and onions.
- Pressure cooker requires about 45 minutes and slow cooker about 8 hours.
The juices are wonderful and can be thickened with flour, cornstarch or brown gravy mix if you prefer a thick gravy.
I like to add potatoes and carrots about half way through the cooking which keeps them from becoming too soft.
Tip: I've learned over the years to not plan dinner at a precise time when cooking a pot roast. Some roasts just take longer to get to the flake apart, fork-tender stage that I like. I'll check at the recommended time and if it is not there I'll cook a little longer. If it is ready early and the rest of my meal is not, I put it on keep warm and go from there.
